Description Chicago Meat Authority (CMA) is proud to have celebrated 33 years in the food industry. Located in Chicago's historic Stockyards, CMA is a forward thinking processor of value added beef, pork, and poultry items with a strong focus on selling the Healthcare, Hotel, and Institutional Markets (HRI), meat purveyors, and Multi-unit regional and national chains up to and including big box stores. In addition, CMA specializes in custom cuts for further processors including but not limited to grinding operations, deli manufacturers, and the prepared entre market. CMA is seeking Skinners for our meat processing facility to process meat to specifications. Individuals must be willing to work in a cold environment.
What You Get To Do
Perform skinning operation by removing fat content per specifications. Operate Whizard Knife by removing fat content per specifications. Use Whizard Knife for processing pork picnics and hams while maintaining yield, throughput, and quality standards. Use skinning machine for processing pork picnics and hams while maintaining yield, throughput, and quality standards. Operate skinning and Whizard knife equipment safely at all times and use all personal protective equipment (PPE). Any and all other duties assigned.

Ability to lift up to 60 pounds and push up to 70 pounds. Required to work overtime (including weekends). Ability to crouch and bend repeatedly.
